peach & blueberry salad with feta & mint

I made this fruit salad for K's birthday party last year and it was requested again this year. I don't think I've ever gotten more compliments on anything. This year, I used white nectarines in addition to peaches because they were perfect/unbelievably sweet, but you can use all peaches or all nectarines, so long as they are ripe and sweet. Don't omit the mint or the feta, as it's the salty/minty/sweet combination that makes this fruit salad both a surprise and a pleasure. Feta and mint are also great with watermelon.


peach & blueberry salad with feta & mint

5 ripe yellow peaches, washed, pitted and cut into bite sized pieces
5 ripe white nectarines, washed, pitted and cut into bite sized pieces
1 lb blueberries, washed
6 oz feta cheese, cubed or crumbled by hand
healthy handful of mint, washed, dried and sliced

Combine peaches, nectarines, and blueberries in a large bowl. Add feta and mint just before serving. Toss gently until mixed. Serve.

Serves 12-15 as side
